Never capital of France (although many kings have resided there), Orleans was the undisputed capital of vinegar!
In the 18th century, it was not less than 300 manufacturers who shared the know-how “Orleans method“, this mode of production in barrels which gives Orleans vinegar its
unique taste.
Today, only the house–Pouret Martin, founded in 1797, continues the tradition of old vinegar. It also has “reinvented“ artisanal Orléans mustard, by grinding mustard seeds on a millstone.
But, why vinegar in Orleans?
In the past, the wines that came there on the Loire (from Anjou, Touraine and Burgundy) on their way to Paris, were often “stung“ … Ideal for vinegar!
