The invention of pithiviers dates from the 17th century with the invention of the pastry but the addition of almond cream is believed to date back to the Roman tradition.
There are two kinds of pithiviers :
Puff pithiviers is best known. It is relatively close to the Galette des Rois in the northern half of France.
The fondant pithiviers is older. It can be covered with a glaze and some candied fruits.
The pastry is made of puff pastry and a filling composed of as many pastry cream as almond powder and granulated sugar with a few drops of almond flavoring.
